Black Bean Salad (Cowboy Caviar)
This salad is a crowd pleaser! I’ve been making this for a long time and it always gets rave reviews. You can serve it with tortilla chips as a dip or as a side dish. Either way, it’s packed with flavor, fiber and goodness!
For the salad
1 can black beans, rinsed
4 ears corn, cut off cob
1 carton cherry tomatoes, diced
1 jalapeño chopped (more if you like it hot!)
2 avocados diced
4 green onions sliced
1/2 bunch cilantro, chopped (about 1/3 cup)
Put all the chopped and diced ingredients into a bowl. Top with cumin lime dressing.
For the Cumin Lime Dressing
Juice of 2 limes
1 clove garlic minced
2 t salt
1/2 t ground pepper
1/2 t ground cumin
1/3 cup extra virgin olive oil
Whisk ingredients in a measuring cup and pour over salad. Enjoy!!
Tips: You can use frozen corn in a pinch but fresh corn tastes so much better. I’ve also made this with red onion instead of green onions. The flavor is stronger with red onion but it adds pretty color.
