Asian Inspired Meatballs
These delicious meatballs remind me of what the inside of a dumpling tastes like. I make mine with a combo of ground chicken and ground pork and they came out flavorful and tender. I added the meatballs to a bowl along with rice, steamed broccoli and edamame.
Asian Inspired Meatballs
Ingredients
1 lb ground chicken
1 lb ground pork (I used bulk breakfast pork sausage from the deli) but plain ground pork would be just fun
1 egg
1/2 C. panko breadcrumbs
2 C. chopped spinach
1/4 C. chopped cilantro
2 t. grated fresh ginger
3 chopped green onions
1 T. sesame oil
2 t. fish sauce
1/2 t. garlic powder
1/2 t. onion powder
1/2 t. salt
1/4 t. white pepper
Add all the ingredients to a large bowl and mix well with your hands. Heat a large skillet to medium and add about 2 t. avocado oil. Swirl to coat. Scoop out meatballs with a cookie scooper or shape with your hands and place on hot skillet. Using tongs, turn the meatballs so they brown evenly all around. Cook until the meat is cooked through, about 10 minutes. You may have to do these in batches depending on the size of your skillet.
Serve meatballs in a bowl with rice, steamed broccoli, edamame, green onions, chopped cilantro, avocado slices and whatever else sounds good to you. Once I put my bowl together, I added a splash of soy sauce, a squeeze of lime and some chili crisp to the top.
*Note…I also added a little chopped serrano to my meatballs to make them a little spicier. If you like heat, this is always a good addition!
